Plausible

The RTX 5080 variant with 2X memory capacity won't likely be available before the release of the RTX 6000 series, but such a configuration is reportedly possible.

RTX 5080 With 32 GB VRAM (or More) Likely to Appear in the Market In a Year; Has VRAM Chips on Both Sides of the PCB

Earlier, we saw a Chinese GPU repair technician claiming that the RTX 5080 32 GB edition already exists, but the latest reports suggest that the GPU isn't yet available for purchase. As reported by @unikoshardware, some reports indicate that the RTX 5080 32 GB was originally planned for cloud services such as cloud gaming, but the corresponding BIOS got accidentally leaked to the mainstream consumer market.

While the one that exists on the market is a 16 GB card, this one brings twice the memory capacity by bringing the VRAM chips on both sides of the PCB. This is already possible since the RTX 4080 with 32 GB already exists in the Chinese markets, and the same mod is also apparently possible on its successor. However, the RTX 5080 32 GB isn't fully prepared yet to be sold as the BIOS isn't signed yet, and the GPUs can't post.

It's expected that the RTX 5080 32 GB will be available when NVIDIA releases the RTX 60 series, which should probably be released in early 2027. So, we have a year or more before the higher VRAM capacity model enters the Chinese consumer market, which will be helpful in memory-intensive workloads. As far as the modification goes, the RTX 5080 32 GB uses a special PCB that can accommodate VRAM chips on both sides.

We have already seen how some Chinese labs are making RTX 5090 with higher VRAM capacities previously. They simply rip off the GPU chip and the VRAM modules and deploy them on a custom PCB with a blower-style cooler. These PCBs allow adding more VRAM chips on the back to increase the VRAM capacity, and that's how the RTX 5080 with 32 GB VRAM will be possible.

That said, if NVIDIA has any plans to release the Super series this year, we may see up to 48 GB VRAM capacity with such a configuration. However, one YouTube channel already showed a 32 GB+ and a weird memory configuration, where the RTX 5080 is spotted with ~42 GB VRAM. We don't know if that's even possible since we don't have any GDDR7 VRAM chip that is between 2 GB and 3 GB. Till then, gamers can either wait for NVIDIA to release the Super variant that will boast 3 GB memory modules to have a capacity of 24 GB, or just stick to the current 16 GB model.
